Peach/Arugula Salad

DRESSING: 

3 TBSP white wine vinegar

3 TBSP fresh red raspberries

1 tsp. Dijon mustard

5 TBSP olive oil 

pinch each of salt, pepper and sugar

 

SALAD INGREDIENTS: 

 

4 cups torn arugula leaves

4 cups torn butter lettuce leaves

2 or 3 ripe peaches, cut into slices

1/3 cup toasted almonds

Combine dressing ingredients and whisk together, crushing and blending the raspberries. Pour dressing over peaches and let sit. Arrange greens in a bowl. Pour peaches and dressing over greens. Toss. Add toasted almonds and serve.

A group gathers eight times a year, roughly at the change of seasons, to honor and reflect on the rhythm of our lives, as we honor the rhythms of the seasons.
