Peach Chutney

1/2 cup cider vinegar

1/2 cup brown sugar, loosely packed

1/2 cup white sugar

1 sweet red pepper

1 small onion

1 small jalepeno pepper

1/3 cup white raisins

1 TBSP garlic

1 TBSP ginger

1/2 tsp salt

1 1/2 pounds ripe peaches, peeled and sliced 

 

Heat the vinegar and sugars together, then add all the ingredients except the peaches. Simmer to blend the flavors. Add the peaches, bring to a boil, then simmer to reach the desired consistency. ( I mashed the peaches once they had softened.)
