Kale Salad with Red Currants

1 large bunch Red Russian kale

1 TBSP. Olive oil

1 TBSP. Lemon juice.

½ cup roasted sunflower seeds

½ cup fresh red currants.

 

Wash the kale. Strip the leaves from the stems. Then cut the leaves in fine strips and put in large bowl. Add the olive oil and the lemon juice and massage the kale until it is limp with the oil. Add the sunflower seeds. Just before serving, add the currants, and then garnish with a spoonful of currants on top.

Delicious! Nutritious and colorful!
